Ingredients

For the Crust

  • 2.5 cups all-purpose flour
  • 8 tablespoons of cold cannabutter (yes, it needs to be cold)
  • 1/3 cup vegetable shortening
  • 3/4 teaspoon salt
  • 7-10 tablespoons ice water

For the Filling

  • 8 cups peeled, cored, and sliced apples
  • 2 tablespoons cannabutter (diced)
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1.5 teaspoons apple pie spice
  • 2 teaspoons vanilla extract
  • 1/4 boiled apple cider

Directions

For the Crust

1. Combine Flour, Salt, and Shortening

In a bowl, use a whisk to combine the flour and the salt. Gradually add in the vegetable shortening and continue to mix until it has a crumbly consistency.

2. Add the Cannabutter

Cut the cannabutter into small pieces. About 1/2 inch chunks should work well. Mix it in with the flour, salt, and shortening until it retains a crumbly texture.

3. Add the Water

Do this gradually, about 2 tablespoons at a time. As you add the water, mix it in with a fork. When the dough is moist and stable enough that it holds together, gather it from the bowl and transfer it to a piece of wax paper.

4. Divide the Dough

Bring the dough together by folding it in on itself a few times. Then, divide it so that one piece is about twice the size of the other piece. Form each piece into a disk about 3/4 inch thick.

5. Chill the Dough

Smooth the edges of each dough disk. Then, wrap each piece in plastic (individually) and stick it in the fridge for 30 minutes.

For the Filling

1. Combine the Dry Ingredients

Whisk together the sugar, cornstarch, salt, flour, and apple pie spice in a bowl.

2. When life hands you lemons…

Take the lemon juice and mix it with the apples in a large mixing bowl.

3. Combine the Wet and Dry Ingredients

Sprinkle the dry ingredients over the apples. Stir it all together so that all of the apples are coated. Then, add in the boiled cider and vanilla. Stir again.

Bringing Everything Together

1. Preheat

Preheat your oven to 425º F.

2. Crust Prep

It’s time to roll the crust! First, lightly grease your pie pan. Take the dough out of the fridge. Roll the larger piece into a 13-inch circle and transfer it to the pan. Trim the edges of the crust, leaving an inch or so around the rim.

Then, roll the smaller piece of dough into an 11-inch circle. Cut decorative holes to vent the steam when it’s time to bake. Be creative! Or just prick the dough with a fork a bunch of times. That’s fine, too.

3. Fill it Up

Fill the bottom pie crust with the apple mixture. Top it with the additional diced cannabutter.

4. Top it Off

Place the top crust over the filled bottom crust. Using the overhang from the bottom crust, seal it up by pinching the two pieces of dough together all the way around.

Get Baked!

Put the pie pan on a baking sheet. Line the baking sheet with parchment paper for an easier clean-up. Stick everything in the oven for 20 minutes. Then, reduce the oven’s heat to 375º F and continue baking the pie for about 40 more minutes. A good rule of thumb is to continue baking until you see the apple filling bubbling beneath the surface or dribbling over onto the baking sheet.

When it’s done baking, let it cool. Cut and serve when the filling has firmed up.
